This is a twist on the classic lemon bar. They are super easy to whip up and their lemon lime flavor is both tart and delicious!
Crust Ingredients:
- 1 cup butter
- 1/2 cup white sugar
- 2 cups all-purpose flour
Lemon Bar Ingredients:
- 4 eggs
- 1 1/2 cups white sugar
- 1/4 cup all-purpose flour
- 2 lemons, juiced
Lime Swirls Ingredients:
- 1/4 cup lime juice
- 2 Tablespoons sugar
- flour to thicken
Preheat your oven to 350 degrees. In a bowl combine softened butter, flour, and sugar. Blend well.
Press the mixture into the bottom of an ungreased 9x13 inch pan. Bake for about 15 to 20 minutes or until golden.
In a small bowl, whisk together the lime juice and sugar. Add a small amount of flour until slightly thickened. {{If you add too much flour, it will be chewy when baked.}}
In another bowl, mix together sugar and flour. Whisk in the eggs and lemon juice. Pour this mixture over the baked crust.
Take spoonfuls of the lime mixture and put evenly around the lemon mixture. Then, using a spatula, swirl the two mixtures together. Bake for 20 minutes. The lemon bars will firm up as they cool.
After the lemon bars have cooled, dust them with powdered sugar and serve! {{Lemon bars taste best when they are served within a day or are refrigerated until served.}} Enjoy!
