Skillet Lasagna

Every once in awhile, I stumble upon an AMAZING recipe that becomes one of my “make all of the time” recipes!  This recipe made that hard to make list!  I was so amazed with how easy this recipe was, as well as how exceptional it tasted!  It was so YUMMY!!  I found the original recipe here.

Skillet Lasagna

  • 1 lb. ground beef
  • 1 small onion, chopped finely
  • 1 clove garlic, minced
  • 1 (14.5 oz.) can diced tomatoes, undrained
  • 1 1/4 c water
  • 1 (8 oz.) can tomato sauce
  • 1 Tbsp. dried parsley
  • 1 tsp. dried basil
  • 1 tsp. dried oregano
  • 1 tsp. salt
  • 1/4 tsp. pepper
  • 2 1/2 c bow tie pasta, uncooked
  • 1 c cottage cheese
  • 1/4 c grated parmesan cheese

In a large skillet, brown beef with onion & garlic.  Drain fat.  Add tomatoes, water, tomato sauce, parsley, basil, oregano, salt & pepper.  Mix well.  Stir in uncooked pasta.  Bring to a boil, stirring occasionally.  Reduce heat, cover & simmer for 20 minutes or until pasta is tender, stirring once.   Stir in cottage cheese.  Cover with parmesan cheese.  Cover & cook an additional 2 minutes.  Serve & enjoy!
