Porcupine Meatballs

It is time for another {{Servin’ It Up Saturday}}!!  I love food & love sharing my recipes that are SO SO delicious!  I have a whole recipe box full of tried and true favorites my family loves….that will slowly be making their way to our blog!!

Porcupine Meatballs

  • 1 lb ground beef
  • 1/2 c. uncooked white rice
  • 1/2 c. water
  • 1/2 c. chopped onion
  • 1 tsp salt
  • 1/2 tsp celery salt
  • 1/8 tsp garlic powder
  • 1/8 tsp ground black pepper
  • 1 (15 oz) can tomato sauce
  • 1 c. water

-In a large bowl, combine the ground beef, rice, 1/2 c. of water and onion.  Blend in salt, celery salt, garlic powder and pepper.  Mix well.  Shape into 1 1/2 inch balls.

-Preheat oven to 350.  In a large skillet over medium heat, brown the meatballs; drain fat.

-In a 11x7 inch baking dish, combine tomato sauce and 1 c. water.  Place the browned meatballs into the tomato sauce, turning to coat well.

-Cover and bake in oven for 45 minutes.  Uncover & cook for an additional 15 minutes.

As a young girl, I made these for my dad, who was always talking about how my grandma made them so well. Little did I know you were supposed to bake them in sauce (to cook the rice), and I served them after frying them. Needless to say, they were not a hit!! LOL!!! Thanks for sharing the recipe, I just may make these for my kiddos soon and share this story with them! ;o)
