Lemon Poppy Seed Pancakes
I have always LOVED poppy seed muffins….so when I found this recipe at picky cook, I knew I had to try them! The pancakes look amazing & even better with the raspberries and strawberries on top!

Better For You Breakfast Sandwich
Do you remember the show “Cook Yourself Thin”? Ok, I might have been slightly addicted to the show, and was
- 2 Tbs vinegar
- 4 whole wheat english muffins
- 4 slices low-fat cheese
- 4 slices ham
- 4 eggs
- 4 slices tomato
- spritz of olive oil
- 1/2 Tbsp. oregano
- salt & pepper to taste
- Preheat your oven to 350 degrees. Fill a large skillet with 4 inches of water. Add vinegar and bring to a steady boil.
- Arrange muffin halves on a baking sheet. Place a slice of cheese on each. Cut the slice of ham into shreds and place on top of cheese. Place in oven for 4 min.
- Cut 4 slices of tomato and spritz each side with olive oil. Sauté over medium-high heat. Sauté for 1 minute on each side. Season with salt, pepper and oregano.
- Poach eggs in vinegar water. Transfer to a plate with a paper towel to drain.
- Remove Muffin halves from oven. Place tomato and egg on each. Season with salt and pepper.
These are seriously DELICOUS and good for you! The shreds of ham make you think your getting a lot of ham….even though you aren’t…..tricky tricky!! I hope you enjoy these as much as we do at our house!

Eggs Benedict
I truly LOVE eggs benedict. It is an amazing breakfast and is incredibly simple to make!
Here’s what you’ll need:
English Muffins
Eggs
Ham
Packet of hollandaise sauce
Asparagus (optional)
Start by cooking your asparagus until tender. While the asparagus is cooking, toast your english muffins and make your hollandaise sauce using the directions on the back of the packet.
You can poach or fry your eggs…poached eggs definitely turn out prettier! =) (I usually just fry my eggs because it take MUCH less time! But in case you’re more patient than I am, I’m adding the directions for egg poaching.)
To poach eggs: Fill a large frying pan with 3 inches of water. Bring water to a gentle simmer, then add 1 teaspoon of white vinegar. Carefully break your eggs into the simmering water and cook for 2 1/2 to 3 minutes. Yolks should still be soft in center. Remove eggs from water with a slotted spoon.
While your eggs are cooking warm the ham over medium heat.
Spread your toasted english muffins with butter and top each one with a slice of ham, followed by one egg, and several pieces of asparagus. Drizzle with hollandaise sauce and serve immediately. Enjoy!

Buttermilk Waffles
Welcome to our Servin’ It Up Saturday! I thought I would change it up a little bit and add a staple off of our breakfast menu!
I have always been a lover of anything breakfast….especially waffles!! I have tried mixes, and every by scratch recipe around…..until I found this one, and I haven’t made waffles any other way since then! (: These waffles are so easy to put together, which makes it nice on those mornings it feels like all I do is run around like a crazy lady trying to get out the door.
I don’t know if it is the cinnamon in the waffles that makes them so much better than other versions, but these are magnificent!
Buttermilk Waffles
- 1 stick butter, melted
- 2 cups flour
- 1/4 cup brown sugar
- 1 tsp baking soda
- 1 1/2 tsp baking powder
- 1/2 tsp cinnamon
- 1/2 tsp salt
- 3 large eggs
- 2 cups buttermilk
- 1 tsp vanilla
- Preheat waffle iron.
- Beat eggs until fluffy.
- Beat in everything else just until smooth.
- Pour batter onto waffle iron & cook.
- Serve with butter and your favorite syrup.
